Jaggery (Gud)

Unrefined sugar is used to make jaggery (or gur), which is created by boiling fresh, condensed sugar cane juice until it solidifies. While jaggery can also be made from coconut and date palm sap, the one made from sugar cane is the most common. Jaggery induces bowel movements and helps avoid and alleviate constipation by activating digestive enzymes throughout the body.
